Honey Raspberry Vinaigrette
Ingredients:
- 1 cup fresh raspberries
- 2/3 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 tablespoon white sugar (can leave out if you want)
- 1/2 teaspoon salt
Mix raspberries and sugar together in a bowl; set aside for about 10 minutes. Mash berries using a fork until liquefied. Pour berries into a jar and add balsamic vinegar, olive oil, honey, and salt. Cover jar with lid and shake until dressing mixed. Can store in refrigerator for 5 days.
Hemp Seed Peppercorn Dressing
Ingredients:
- 1 cups hemp seed
- 3 tablespoons olive oil
- 1/4 cup nutritional yeast
- 1 tablespoon cilantro
- 3 tablespoons water
- 2 tablespoons fresh parsley
- 2-3 garlic cloves
- 3 teaspoons freshly ground black pepper
- 1/2 teaspoon salt, or more to taste
In a food mixer throw all the ingredients together and blend until smooth. Can store in refrigerator for 3-5 days.
Lebanese Lemon Garlic Dressing
Ingredients:
- 4-5 garlic cloves
- 1/2 cup of fresh lemon juice
- 1/2 cup olive oil
- 2 teaspoons pink salt
Mash garlic cloves and salt together in a mortor bowl until it is a paste. Add lemon juice and then olive oil and mix well. Mix into salad and let sit for about 5-10 minutes before serving. Add some fresh mint and parsley if you choose as it will bring out the salad dressing even more. Can store in refrigerator for 5 days.
